Linked with the sun and sky in mythology and storytelling, the falcon is a regal and majestic symbol. The roots of the national bird of Qatar and falconry go deep across the Arabian Peninsula, they are a time-honoured tradition within Qatar’s culture symbolising wisdom, vision, and protection.
Hello, I’m Simon Atallah and I’m originally from Lebanon.
At the start of my culinary career, when 22 years old, I discovered the art of pastry at the Casino du Liban and I haven’t looked back since. I focused on developing my skills and put them to good use in the various pastry and bakery sections of kitchens at the Movenpick Hotel Beirut, Le Notre de Paris Qatar, Fauchon de Paris Beirut, and the Holiday Inn and Crowne Plaza Hotels in Kuwait.
I’m proud to have achieved various certificates as a result of my dedication to professional development, such as being a member of Qatar culinary professionals and also as a judge at the World Association of Chefs Societies 2018 – 2023.
During my work in Qatar and Kuwait I have received Gold and Silver medals and am currently the Executive Pastry Chef at Ali Bin Ali Hospitality.
Working at the FIFA World Cup Qatar 2022™ is truly a dream come true and such a privilege to be the Executive Pastry Chef for the Match Private Suites.
I’m trilled to be presenting many delicious and delicately flavoured deserts, from a classic Mille Feuille to Rose Strawberry Eclairs.
